I'm on a number of other lists that are set up like this one (reply-to set to sender) -- in fact, I administer one -- and I vastly prefer this set-up. Some of these lists, which include Loud-Fans, fegmaniax, and my list, idealcopy (the Wire list), are among the most talky lists I've ever been on, so I don't think this set-up inhibits list conversation at all.
Plus I think it's not a bad idea to require a modicum of thought before sending a post to 100 to 500 other individuals. And as you said:

In most mail clients, that's all it takes. To avoid the "double-posting" to the original sender, just delete his or her e-mail address from the "To" field.
